    This evening, take a short stroll to Grounded Table, where your welcome dinner awaits. The restaurant’s ever-evolving menu celebrates Oregon’s seasonal bounty in a playful, casual form. You’ll be joined by Travis Todd, owner and winemaker of de la boue, who will personally share his small-production, expressive wines—many of which rarely make it beyond the cellar door. It’s a relaxed, convivial start to your journey through the Willamette Valley.

  • Begin your exploration of the Yamhill-Carlton AVA with a field tasting at Elk Cove Vineyards, the first estate established in the AVA and a pioneer in Oregon winemaking for over five decades. Your day opens with a welcoming glass of Rosé as you’re guided through the estate’s original vineyards, tasting wines amidst the vines where they were grown and learning how the land, slopes, and soils shape each bottle. Continue your journey into the Estate Room, a modern Northwest-style space with sweeping vineyard views, for a curated flight of wines across Elk Cove’s history. Here, a comparative tasting of young releases alongside the estate’s oldest library Pinot Noirs offers a rare glimpse into how Oregon wines evolve over decades, accompanied by an artisan board of meats and cheeses designed to enhance each pour.

    Next, journey to Soter Vineyards and step into the heart of Mineral Springs Ranch, a Demeter-certified biodynamic estate where land, people, and purpose converge. Here, your Provisions Experience is an immersive, behind-the-scenes journey through the estate. Begin with a private introduction to the winemaking team, exploring the craftsmanship, care, and philosophy that shape Soter’s small-lot Pinot Noir, Chardonnay, and sparkling wines. Afterwards, settle in for a guided culinary experience, showcasing seasonal pairings sourced directly from the estate’s working farm. The ever-evolving menu reflects the seasonality of the land, with dishes that mirror the diversity and texture of Oregon’s bounty.

  • The day starts at Résonance, Maison Louis Jadot’s first venture outside Burgundy, perched on a dramatic hilltop in the Yamhill-Carlton AVA. As you wander through the vineyard, take in sweeping views of the Coastal Range and hear the history of Résonance from your dedicated winery host. Enjoy an elegant side-by-side tasting of Résonance selections alongside their Burgundian counterparts. Three carefully curated pairings, including the Résonance Vineyard Pinot Noir, showcase the dialogue between New-World energy and Old-World tradition, complemented by artisanal French cheeses chosen to enhance each pour. Your sommelier guides the tasting, illuminating how the valley’s unique terroir shapes each wine with precision, elegance, and depth.

    After a relaxed lunch in the charming town of Carlton, the journey continues to Atticus Wine, where the experience is deeply personal and intimate. Guided by owner and winemaker Ximena Orrego, your group enjoys a private tasting in the estate home overlooking the vineyard. Small-lot Pinot Noirs are paired with a rare library selection poured exclusively for this visit, served in Zalto glassware while vinyl records play softly in the background. End with a gentle stroll through the vineyard, gaining insight into a property that has been nurtured by the Orrego family for nearly two decades. 

    Return to McMinnville for downtime before gathering in The Atticus Hotel’s private boardroom for a farewell dinner prepared by Chef Travis Bird of Cypress. This intimate evening celebrates the region’s culinary artistry and the friendships forged along the way—a final toast to your time in Oregon wine country.

  • For those wishing to stay longer, we offer the option to extend your visit by one night so you can spend an exclusive morning at Beaux Frères, one of the Willamette Valley’s most celebrated wineries. Founded by the Etzel family in 1988, this Ribbon Ridge estate helped shape Oregon’s global reputation for Pinot Noir. You’ll enjoy a guided walk through their historic vines, followed by a seated tasting for a rare glimpse into one of the region’s most storied producers.

    Conclude your extended journey with a private lunch experience at Ambar Estate, where innovation and nature intertwine. Hosted in one of their luxury hospitality suites, enjoy a seasonally inspired tasting paired with small plates that highlight the vibrancy of Pacific Northwest cuisine. It’s an elegant close to your time in the verdant Willamette Valley.
